The culinary tradition is so deeply rooted in this country, that already before the time of Arzak or Luis Irizar, the Basque chefs have maintained in a very serious and professional manner the love for the stove. Even the “Tamborrada” is a parade, in the heart of the winter that means the maximum expression of the joy and dedication for these people for the art of cooking and enjoying food.
Far away from the international cuisine contests, within the Basque society you can clearly feel the omnipresent good taste for eating and for the healthy fresh ingredients, from the orchard or from the sea. Without too much ornamentation, very much within one’s reach. We’ll make you feel one more of the family, showing you where you can get the best “pinxos” in the old town, or we’ll show you how the Cantabric coast harbours vibrate. The fish is definitely one of the most exceptional preparations that you can taste! On the other hand, we’ll have the chance of visiting a gastronomic society (normally inaccessible to visitors) and we’ll breathe the friendly atmosphere of the “cuadrilla” (coterie) which they so much preserve. Like at the “sidrerias” (cider-taverns).
